Potato and Leek Soup

Mince the white portion of:

5        -        Medium      Leeks

1        -        Large          Onion

Stir and sauté for 3 minutes in:

3        -        TBS            Butter

Peel, slice, and add:

6        -        Medium      Potatoes

Add potatoes and mix in:

4-6    -        Cups           Clarified Chicken Stock

Simmer covered for about 15 minutes or until the potatoes are tender.

White Sauce

In a separate pan, melt:

2        -        TBS            Butter

Blend in:

2        -        TBS            Flour

-        -           -              Salt (to taste)

-        -           -              White Pepper (to taste)

Add in:

1        -        Cup            Milk

Heat until mixture thickens and bubbles. Stir the bottom of the pan constantly to avoid burning.

Add White Sauce to Soup.

Take a third to a half of the soup and blend in a blender or food processor until smooth. Return blended mixture to the soup and stir.

 

Background
This has become a Christmas Eve tradition at the Black/Ackland household. It is also a good one for parties, since it can be prepared ahead of time, and is easy to serve. This soup goes well with Crumbly Beef sandwiches.
